A rye eau-de-vie from the impressive Domaine des Hautes Glaces distillery, which specialises in rye whisky dripping with terroir. This eau-de-vie demonstrates what the spirit is like pre-maturation for a very pure example of the impact the local rye variety is having on the spirit, grown on Hautes Glaces farm on the slopes of Vulson. It's really worth trying this alongside the rye whisky.
Petrichor, garden herbs, anise, plums, and freshly-baked rye bread.
