That Boutique-y Rum Company is back with a second batch of pot-distilled rum from Australia's Black Gate distillery. Produced with molasses sourced from Queensland, fermented for up to two weeks, the rum is double distilled in direct-fired pot-stills, making for a punchy, full-flavoured spirit. This expression was treated to a three-year stay in casks that previously held tawny wine – Australia's answer to Port, so expect plenty of richly tannic dark fruit and spice here. The label shows that small dogs can still make great guards with distillery dachshund Frankie doing a tremendous job chasing away a gang of thirsty kangaroos.
Batch 2 is a release of 179 bottles.
Heaps of dried fruit, sticky toffee, and woody spice are joined by chocolate muffins, a touch of leather, earthen spice, and fruit studded tea loaf.
Enjoyably oily, with jammy notes of dark berries and currants alongside juicy yellow plums, dried banana, and charred pineapple.
A dusting of chilli flakes and root ginger arrives towards the end, kept in check by lusciously leathery oak and cooked pear.
