Caol Ila 11 Year Old 2007 (Master of Malt)
This cracking Caol Ila has been calling to us for a while. Well, no, it's been slumbering soundly inside a refill hogshead, while we've been (im)patiently waiting for it to join our collection of exclusive releases. Distilled in 2007, the whisky spent 11 years maturing, and now 49 bottles join the MoM family.

Tasting Note by The Chaps at Master of Malt
Nose
Baked apples and sweet grist, with layers of creamy rice pudding (including a burnt top), butter biscuits, and smoked sea salt. Hints of herbaceous peat and fennel nestle comfortably among the cream.
Palate
Everything from the nose, wrapped up in a perfect bouquet of cream and smoke. Silky soft vanilla custard, crystalised ginger, charred garden herbs, and elegant peat.
Finish
Candyfloss, burnt sugar, and baked apples linger, while a touch of coastal tar arrives, supported by warming waves of pink peppercorn.
